Orchiette Bolgnese

Lily can now add all ingredients, grate cheese, and above all... tell me when the water is boiling.

1/2 pound ground beef
1/2 pound ground pork
1/2 pound ground veal * i know, but it was just calling to me at Smith's!
2 tablespoons olive oil
1 chopped onion
1 diced carrot
1 diced celery
Salt and Pepper

Saute onion and vegetables until translucent. Add meat mixture and brown until no longer pink.

Add 1 cup milk and simmer until most liquid is absorbed

Add 1 cup wine (we used dry white) and simmer until most liquid is absorbed

Add 1 26 oz. can of tomatoes and let simmer 1.5 hours.

Boil salted water and and add 1 pound pasta (we used little ears but sticks will do)

Add a handful of parmesan reggiano and fresh flat leaf parsley.

Fettucini Alfredo

This is the day we stopped eating cheesy noodles and pronounced "Fettucini Alfredo".

6-8 TBSP Butter (melted)
1 1/2 cups Half and Half (stir into butter)
1 cup shredded Parmesan Reggiano (stir into milk)
light salt
fresh cracked pepper

Tada

sometimes it's not quite up to code

Jiffy corn muffins

Sometimes you need to sort through your priorities.

So Lily is making muffins on crazy KT's floor.

They were delicious.

Pumpkin Bread

Lily loves the Kitchen Aid. What to do with the extra pumpkin you didn't carve? Well, it was a fight between the pumpkin soup and pumpkin pie - but pumpkin chocolate chip bread won.

Preheat oven to 400
In a medium bowl mix in:
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon baking power
1/2 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

In the Kitchen Aid Bowl add and Beat until creamy:
6 Tbsp softened butter
1 1/3 cup sugar
Add one at a time:
2 eggs (Let the kids break them into separate bowl - they love it! Lily has been doing this since she was 2!)
1 cup cooked pumpkin (canned is fine but recipe follows)
Mix in:
2 or 3 little handfuls of chocolate chips

Pour into a greased loaf pan (I use olive oil spray - Lily loves to spray this all over the place). Bake for 40-50 minutes until toothpick comes out clean.
